Make your own Banana Walnut Loaf
Ingredients
125g unsalted butter, melted150g caster sugar
2 eggs
60g walnuts, chopped
3-4 very ripe bananas
175g self raising flour sifted
1/2 teaspoon bicarbonate powder
A pinch of salt
2 teaspoon baking powder
1 teaspoon vanilla essence
Method
- Preheat oven to 170 degrees. Grease the loaf tin and line with baking paper
- Mic the butter and sugar in a bowl with a whisk until the mixture is light and fluffy. Beat in one egg at the time, beating thoroughly after each addition.
- Mash the bananas and whisk into the mixture
- Add walnuts and continue to whisk until well mixed
- Fold in the dry ingredients, making sure to sift before adding to mixture
- Fold in the vanilla essence
- Pour the mixture into the tin and smooth the surface. Bake for 1 hour or until a skewer comes out clean when inserted into the centre of the loaf. Remove from tin and turn out onto a wire rack. Leave to cool.
