Make your own Banana Walnut Loaf


Ingredients

125g unsalted butter, melted
150g caster sugar
2 eggs
60g walnuts, chopped
3-4 very ripe bananas
175g self raising flour sifted
1/2 teaspoon bicarbonate powder
A pinch of salt
2 teaspoon baking powder
1 teaspoon vanilla essence

Method


  1. Preheat oven to 170 degrees. Grease the loaf tin and line with baking paper
  2. Mic the butter and sugar in a bowl with a whisk until the mixture is light and fluffy. Beat in one egg at the time, beating thoroughly after each addition.
  3. Mash the bananas and whisk into the mixture
  4. Add walnuts and continue to whisk until well mixed
  5. Fold in the dry ingredients, making sure to sift before adding to mixture
  6. Fold in the vanilla essence
  7. Pour the mixture into the tin and smooth the surface. Bake for 1 hour or until a skewer comes out clean when inserted into the centre of the loaf. Remove from tin and turn out onto a wire rack. Leave to cool.
